Preheat your grill or grill pan over medium-high heat.
In a large bowl, mix 2 tablespoons olive oil, ketchup, Sriracha, ½ cup honey, water, lime juice and zest, garlic, and ginger.
Toss the chicken thighs in the marinade and let ‘em sit for at least 30 minutes.
Take chicken out and ditch the marinade. Brush your grill with the last tablespoon of olive oil.
Cook the thighs on the grill about 6-7 minutes each side or until they hit 165°F inside.
Take the chicken off the heat and let it rest a few minutes.
Slice it up and put it on the pretzel buns with cheese and all your other toppings. Enjoy!
Notes
Serve your sliders with a side of freshly cut green onions and your favorite dipping sauce for enhanced flavor.
