  • 3 pounds Boneless skinless chicken thighs
  • 3 tablespoons Olive oil divided
  • 0.5 cup Ketchup
  • 0.5 cup Sriracha chili sauce
  • 2 tablespoons Honey
  • 0.5 cup Water
  • 3 tablespoons Fresh lime juice
  • 2 teaspoons Fresh lime zest
  • Minced garlic to taste
  • Ground ginger to taste
  • Pepper to taste
  • 12 Mini pretzel buns sliced
  • 12 slices Part-skim mozzarella cheese halved
  • Crushed red pepper flakes optional
  • Coarse salt optional
  • Green onions garnish
  • 1 cup Reduced-fat mayonnaise
  • 2 tablespoons Sriracha for dipping sauce
  • Lime juice to taste for dipping sauce
  • Lime zest to taste for dipping sauce

  • Preheat your grill or grill pan over medium-high heat.
  • In a large bowl, mix 2 tablespoons olive oil, ketchup, Sriracha, ½ cup honey, water, lime juice and zest, garlic, and ginger.
  • Toss the chicken thighs in the marinade and let ‘em sit for at least 30 minutes.
  • Take chicken out and ditch the marinade. Brush your grill with the last tablespoon of olive oil.
  • Cook the thighs on the grill about 6-7 minutes each side or until they hit 165°F inside.
  • Take the chicken off the heat and let it rest a few minutes.
  • Slice it up and put it on the pretzel buns with cheese and all your other toppings. Enjoy!

Notes

Serve your sliders with a side of freshly cut green onions and your favorite dipping sauce for enhanced flavor.
