Pour chicken broth into your pressure cooker and set it to medium heat. Bring to a gentle boil.
Add the bite-sized chicken pieces and simmer for 10 to 12 minutes until cooked through and tender.
Gently add potstickers into the soup and cook for 5 to 7 minutes, until they float.
Add spinach leaves and cook for 1 to 2 minutes until just wilted.
Season the soup with salt and pepper to taste and stir gently.
Ladle soup into bowls and top with feta if using. Serve hot.
Notes
Frozen spinach can be used in place of fresh—add earlier so it cooks through. Use roasted leftovers for faster prep.
