Italian Grinder Pasta Salad

  • 1 ⅓ cups mayonnaise
  • cup red wine vinegar
  • 1 tablespoon peperoncini pepper juice from the jar
  • 2 containers marinated mozzarella cheese balls in oil, sliced into quarters
  • ½ teaspoon fresh black pepper
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon red pepper flakes optional
  • 1 pound rotini pasta cooked until al dente
  • 5-6 peperoncini peppers sliced in rings
  • 10 ounce cherry tomatoes cut in half or quarters
  • 1 cup pickled red onion
  • 10 slices deli Genoa salami cut into chunks
  • 8 slices deli ham cut into chunks
  • 20 slices pepperoni cut into quarters
  • ½ head lettuce shredded

Instructions

  • In a medium bowl, whisk together all dressing ingredients until smooth. Set aside.
  • In a large bowl, combine rotini, mozzarella balls, peperoncini, cherry tomatoes, pickled red onion, salami, ham, and pepperoni. Do not add lettuce yet.
  • Pour the dressing over the salad ingredients and gently stir until combined well.
  • Cover the salad and refrigerate for at least 2 hours, allowing flavors to meld together.
  • Before serving, gently stir in shredded lettuce.

Notes
