  • 2 pounds Lamb shoulder chunks
  • 1 large Onion chopped fine
  • 3 cloves Garlic minced
  • 4 Carrots chopped
  • 4 Potatoes diced
  • 4 cups Beef broth
  • 1 tablespoon Tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dried thyme
  • 1 teaspoon Smoked paprika
  • Salt and pepper to taste
  • 2 cups Colcannon mashed potatoes with kale or cabbage

  • Heat up your Dutch oven on medium-high. Toss in lamb chunks and brown them, working in batches.
  • Add onion and garlic to the pot. Sauté until soft.
  • Stir in carrots and potatoes. Return the lamb to the pot.
  • Pour in beef broth, add tomato paste, Worcestershire sauce, thyme, smoked paprika, salt, and pepper. Stir and bring to a simmer.
  • Cover and cook on low heat for 30 minutes.
  • Do a quick release, check for tenderness. Serve hot over colcannon.
