Place the chicken breasts in the bottom of the Instant Pot.
Add the black beans, white beans, chopped onion, corn with its juice, and Rotel with their juice on top of the chicken. Don’t stir.
Sprinkle chili powder, cumin powder, and ranch dressing mix evenly over everything.
Gently pour chicken broth over the ingredients without stirring.
Top with cream cheese pieces. Seal lid, set valve to sealing, and cook on high pressure for 20 minutes.
Let the pressure naturally release for 10 minutes, then quick release any remaining pressure.
Remove the chicken breasts, shred with two forks, and return shredded chicken to the pot.
Stir everything together until cream cheese is melted. Serve hot with avocado, cilantro, and tortilla chips or baked potatoes.
Notes
For a shortcut, use pre-cooked rotisserie chicken and add at the end using the sauté mode. Freeze leftovers in portions for easy meals later.
