  • 1 lb chicken cut into small bite size pieces
  • 125 g flat rice stick noodles not vermicelli noodles
  • 1 teaspoon minced fresh ginger
  • 2 cups chicken broth
  • ½ cup peanut butter
  • 3 cloves garlic minced
  • 2 tablespoon sambal oelek chili paste
  • 1 tablespoon fish sauce
  • 1 tablespoon sesame oil
  • 2 tablespoon soy sauce
  • ½ cup scallions chopped
  • 1 cup matchstick carrots or julienne
  • 2 red peppers diced
  • ½ cup chopped cilantro
  • ½ cup peanuts for garnish

  • Set Instant Pot to Sauté mode. Add sesame oil, then cook garlic and ginger for 2 minutes until fragrant.
  • Add the chicken pieces and sauté for 3-4 minutes until lightly browned but not fully cooked.
  • Turn off Sauté. Add chicken broth, soy sauce, fish sauce, sambal oelek, and peanut butter. Stir to combine.
  • Break noodles if long and place on top. Do not stir.
  • Secure lid and set valve to sealing. Cook on Manual High Pressure for 4 minutes.
  • Perform a quick release. Open lid carefully and stir noodles gently to combine.
  • Add matchstick carrots, chopped scallions, and diced red peppers. Stir gently.
  • Top with chopped cilantro and peanuts for garnish. Serve immediately.

Notes

Let noodles rest 5 minutes after cooking for sauce to thicken. Add water in ½ cup increments if too sticky. Swap protein or spice to suit your taste.
