  • 1 pound Chicken cut into small bite-sized pieces
  • 125 g Flat rice stick noodles
  • 1 teaspoon Ginger minced
  • 2 cups Chicken broth
  • 0.5 cup Peanut butter
  • 3 cloves Garlic minced
  • 2 tablespoons Sambal oelek chili paste
  • 1 tablespoon Fish sauce
  • 1 tablespoon Sesame oil
  • 0.5 cup Scallions chopped
  • 1 cup Carrots matchstick or julienne style
  • 2 Red peppers diced
  • 0.5 cup Cilantro chopped
  • 0.5 cup Peanuts for garnish

  • Turn on Instant Pot and hit the sauté function. Add chicken pieces and sauté until they lose their pink color, about 5 to 7 minutes.
  • Stir in minced garlic, ginger, chili paste, fish sauce, and sesame oil. Cook for 1 to 2 minutes.
  • Pour in chicken broth and peanut butter, stir well to melt peanut butter into the liquid.
  • Add flat rice stick noodles, making sure they are submerged in the broth mix.
  • Close the lid and set valve to sealing. Select manual or pressure cook on high pressure, then set the timer for 5 minutes.
  • When time's up, do a quick release on the valve to let out all the pressure fast.
  • Open the lid carefully and gently stir the noodles to mix well.
  • Taste and add soy sauce if extra seasoning is needed before serving.
  • Serve with the fresh garnishes like scallions, cilantro, and peanuts for added crunch.

Notes

Cool the noodles and chicken before storing to prevent sogginess. Store in airtight containers in the fridge, good for up to 4 days, or freeze portions up to 2 months.
