  • 6-8 Boneless chicken thighs skinless or with skin
  • to taste Sea salt and pepper
  • ½ teaspoon Garlic powder
  • ½ teaspoon Smoked paprika
  • ½ teaspoon Red chili flakes optional or to taste
  • 2 tablespoon Olive oil
  • 3 tablespoon Butter or ghee
  • ½ Small onion chopped
  • 4 cloves Garlic sliced or minced
  • 1 Lemon juice
  • 2-4 teaspoon Italian seasoning
  • ½ Lemon zest
  • cup Chicken broth homemade or low sodium
  • 2 tablespoon Heavy cream or coconut cream
  • as needed Fresh parsley chopped, for garnish
  • as needed Lemon slices for garnish

Instructions
 

Instructions

  • Season chicken thighs with sea salt, pepper, garlic powder, smoked paprika and chili flakes.
  • Set Instant Pot to Sauté mode. Add olive oil and butter.
  • Sear chicken for 2-3 minutes on each side until golden brown. Remove and set aside.
  • Add chopped onion to pot and sauté for 2-3 minutes until soft.
  • Add garlic and cook for 30 seconds until fragrant.
  • Deglaze the pot with lemon juice, scraping up brown bits.
  • Return chicken to pot. Add Italian seasoning, lemon zest, and chicken broth.
  • Lock lid, set valve to sealing. Pressure cook on high for 8 minutes.
  • Allow 5 minutes natural release, then quick release remaining pressure.
  • Open lid, stir in heavy cream. Optionally thicken sauce and return chicken to coat. Garnish with parsley and lemon.

Notes

Great served over rice or with roasted vegetables like asparagus or green beans. Use leftover sauce for dipping or meal prepping.
