  • 1 small yellow onion sliced (use ½ if large)
  • 4 cloves garlic peeled and lightly smashed
  • 2 tablespoons pickling spice or seasoning packet with corned beef
  • 2.5 cups water for broth
  • 4 pounds corned beef brisket rinsed off
  • 12 ounces lager-style beer nothing bitter
  • 1 pound tiny potatoes or red-skinned potatoes cut into wedges
  • 1 head cabbage cut into 8 wedges
  • 1 pound baby carrots
  • 1 tablespoon chopped fresh parsley for garnish
  • 2 tablespoons unsalted butter melted (optional)
  • grainy mustard or horseradish sauce for serving (optional)

Instructions

  • Turn your Instant Pot on and hit the 'Sauté' function. Toss in the sliced onion and garlic, sauté until soft.
  • Add pickling spice and water to the pot. Place the rinsed corned beef, fat side up, and pour beer over it.
  • Layer potatoes, cabbage, and carrots over the beef. Seal the lid and set to High Pressure for 90 minutes.
  • Let pressure release naturally for 15 minutes, then carefully quick-release the remaining pressure.
  • Remove beef and veggies, let beef rest before slicing against the grain. Serve with garnishes.

Notes

Optional: Serve with grainy mustard or horseradish sauce.
