Whisk together sweet chili sauce, soy sauce, honey, rice vinegar, garlic powder, onion powder, smoked paprika, salt, and pepper in a bowl.
Add chicken thighs to a dish or bag, coat in marinade, and refrigerate for at least 30 minutes.
Preheat grill or grill pan to medium-high and brush with olive oil.
Grill chicken thighs about 6–8 minutes per side until cooked and slightly charred. Brush with extra marinade.
Transfer grilled chicken to pressure cooker, pour remaining marinade on top, and seal lid properly with sealing ring.
Cook under high pressure for 10 minutes, then use slow release until steam finishes escaping. Open and serve.
Notes
Store leftovers up to 4 days in the fridge or 3 months in the freezer. Reheat gently with a splash of water for best texture.
