  • 1.5 kg chicken thighs (or breast)
  • 1 tablespoon vegetable oil for sear
  • ¾ cup pineapple juice unsweetened
  • 1 ½ tablespoon freshly grated ginger
  • 1 ½ tablespoon freshly grated garlic
  • ½ cup tomato ketchup
  • ½ cup soy sauce
  • ¼ cup sherry or Chinese cooking wine
  • ¼ cup brown sugar +
  • 1 tablespoon Sriracha
  • 2 tablespoon rice vinegar or cider vinegar
  • 1 tablespoon toasted sesame oil for a nutty finish
  • Sliced green onions optional, for garnish
  • Grilled pineapple slices optional, for garnish

  • Whisk together pineapple juice, ginger, garlic, ketchup, soy sauce, sherry, brown sugar, and Sriracha in a bowl for the marinade.
  • Place chicken thighs into a resealable bag, pour the marinade to coat, seal, and refrigerate for at least 1 hour or overnight.
  • Pour marinated chicken and marinade into the pressure cooker. Secure the lid, and once pressure is set, cook for 10 minutes.
  • After cooking, perform a quick release. Optionally, sauté mode can be used to reduce the sauce for a sticky finish.
  • Plate chicken and garnish with sliced green onions and grilled pineapple.

Notes

Marinate chicken longer for deeper flavor. Adjust the sweetness/spiciness to taste.
