Ingredients
  

  • 4 pieces bone-in, skin-on chicken thighs About 2 lbs.
  • ¼ cup soy sauce
  • ¼ cup brown sugar Adjust for sweetness.
  • ¼ cup pineapple juice Adjust for sweetness.
  • ¼ cup ketchup
  • 2 tablespoons rice vinegar
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 teaspoon sesame oil
  • ½ teaspoon black pepper
  • to taste green onions, chopped For garnish.

Instructions
 

  • In a mixing bowl, combine soy sauce, brown sugar, pineapple juice, ketchup, rice vinegar, vegetable oil, minced garlic, grated ginger, sesame oil, and black pepper. Whisk together until well blended.
  • Place the chicken thighs in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for better flavor.
  • Preheat your grill or grill pan to medium-high heat.
  • Remove the chicken from the marinade, letting any excess drip off. Discard any leftover marinade.
  • Place the chicken, skin-side down, on the grill. Cook for about 15 minutes, then flip and cook for another 10-15 minutes, or until internal temperature reaches 165°F (75°C) and the skin is crispy.
  • Once done, remove the chicken from the grill and let it rest for a few minutes.
  • Serve garnished with chopped green onions, alongside rice or grilled vegetables.

Notes

For added flavor, consider marinating the chicken overnight. You can also grill pineapple slices to serve alongside the chicken for an extra tropical touch. Adjust the level of sweetness by altering the amount of brown sugar and pineapple juice to your taste. Enjoy your home-cooked Hawaiian delight!
