  • 8 ounces cream cheese
  • 1 teaspoon vanilla extract
  • 4 cups confectioners powdered sugar
  • 2 ½ cups unsweetened shredded coconut
  • few tablespoons ground cinnamon

  • Grab a large mixing bowl. Combine the softened butter and cream cheese until you get a smooth, creamy mix. It’s gonna look a bit like frosting almost.
  • Stir in the vanilla extract real good. That little bit of extra flavor sets the whole thing off.
  • Slowly add the powdered sugar while mixing. It’s a bit dusty but keep going until it’s all blended fully. That powdered sugar helps get it firm later on.
  • Fold the shredded coconut into the batter. You want it spread nice and even but don’t overdo the folding or it’ll turn clumpy.
  • Shape the mix into small balls or whatever shapes you like. Roll each one in ground cinnamon so they're covered completely.
  • Place your candies on parchment paper lined sheet and pop ’em in the fridge. Let 'em chill for at least 30 minutes till they get firm enough to eat.
