Ingredients
  

  • 1 lb boneless, skinless chicken breasts
  • 1 cup uncooked rice white or brown
  • 3 tablespoons hot honey Adjust according to heat preference.
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 bell pepper thinly sliced
  • 1 cup broccoli florets
  • ½ cup shredded carrots
  • optional chopped green onions for garnish
  • optional sesame seeds for garnish

Instructions
 

  • Cook the rice according to package instructions in a rice cooker or pot. Set aside once cooked.
  • Pat the chicken breasts dry with paper towels. Cut them into bite-sized pieces.
  • In a mixing bowl, combine hot honey, soy sauce, garlic powder, onion powder, salt, and pepper. Add the chicken pieces and toss them well to coat with the marinade. Let it sit for at least 10 minutes.
  • Heat olive oil in a large skillet over medium heat. Once hot, add the marinated chicken to the skillet, spreading it out evenly. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and fully cooked (internal temperature should reach 165°F or 75°C).
  • Add the sliced bell pepper, broccoli florets, and shredded carrots to the skillet. Stir everything together and cook for an additional 5 minutes, or until the vegetables are tender but still crisp.
  • Reduce the heat to low and drizzle the remaining hot honey over the chicken and vegetables in the skillet, tossing gently to combine.
  • Serve the hot honey chicken over a bed of cooked rice in individual bowls. Garnish with chopped green onions and sesame seeds if desired.

Notes

Adjust the amount of hot honey according to your heat preference. You can also substitute it with regular honey and add a pinch of cayenne pepper for a spicier kick.
