Ingredients
  

  • 1 pound carrots, peeled and cut into sticks
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • fresh parsley for garnish optional

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • In a mixing bowl, combine the honey, olive oil, garlic powder, salt, and black pepper. Mix well to combine.
  • Add the carrot sticks to the bowl and toss them in the honey mixture until they are evenly coated.
  • Line a baking sheet with parchment paper to prevent sticking (optional). Spread the coated carrots out in a single layer on the baking sheet.
  • Roast the carrots in the preheated oven for 25 minutes, or until they are tender and caramelized, stirring halfway through to ensure even cooking.
  • Once cooked, remove the carrots from the oven and let them cool for a few minutes. Garnish with fresh parsley if desired before serving.

Notes

For an extra flavor boost, consider adding a pinch of cayenne pepper for heat.
You can substitute maple syrup for honey if you prefer a vegan option.
If you have baby carrots, you can use them whole; just adjust the roasting time as needed.
