Pat the chicken thighs dry and cut into bite-sized pieces.
In a large bowl, toss chicken pieces with cornflour, salt, and pepper until evenly coated.
Heat vegetable oil in a skillet over medium-high and brown chicken for 4–5 minutes per side. Set aside.
Reduce heat, add butter and minced garlic. Sauté for 30 seconds until fragrant.
Add honey, chicken stock, rice vinegar, and soy sauce. Bring to simmer and cook 2–3 minutes.
Return chicken to skillet and coat with sauce. Simmer 2 more minutes until glossy and thickened.
Garnish with parsley and chili flakes. Serve hot over boiled rice.
Notes
For a milder flavor, omit chili flakes. To make it gluten-free, substitute tamari for soy sauce.
