  • 8 chicken thighs skinless and boneless
  • 2 tablespoon cornflour
  • 0.5 teaspoon salt
  • 0.5 teaspoon pepper
  • 2 tablespoon vegetable oil
  • 1 tablespoon unsalted butter
  • 4 cloves garlic minced
  • 110 g honey
  • 80 ml chicken stock
  • 1 tablespoon rice vinegar
  • 1 tablespoon light soy sauce
  • 1 tablespoon fresh parsley finely chopped, for garnish
  • 0.5 teaspoon chili flakes optional, for garnish
  • boiled rice to serve

  • Pat the chicken thighs dry and cut into bite-sized pieces.
  • In a large bowl, toss chicken pieces with cornflour, salt, and pepper until evenly coated.
  • Heat vegetable oil in a skillet over medium-high and brown chicken for 4–5 minutes per side. Set aside.
  • Reduce heat, add butter and minced garlic. Sauté for 30 seconds until fragrant.
  • Add honey, chicken stock, rice vinegar, and soy sauce. Bring to simmer and cook 2–3 minutes.
  • Return chicken to skillet and coat with sauce. Simmer 2 more minutes until glossy and thickened.
  • Garnish with parsley and chili flakes. Serve hot over boiled rice.

Notes

For a milder flavor, omit chili flakes. To make it gluten-free, substitute tamari for soy sauce.
