  • 300 g Chicken thighs skinless, boneless, cut into 1 inch pieces
  • 1 tablespoon Light soy sauce for marinade
  • 2 teaspoon Chinese cooking wine can substitute with soy sauce
  • 2 teaspoon Cornflour for marinade
  • ½ cup Cornflour for dredging
  • 6 tablespoon Cornflour for batter
  • 4 tablespoon All-purpose flour
  • 7-8 tablespoon Cold soda water for batter
  • ¼ teaspoon Baking powder
  • ¼ teaspoon Salt
  • 2-3 cups Vegetable oil for frying
  • cup Honey for sauce
  • 1.5 tablespoon Glucose or corn syrup for sauce
  • 1 tablespoon Light soy sauce for sauce
  • 2 teaspoon Chinese cooking wine for sauce
  • 25 g Vermicelli rice noodles optional, for garnish
  • Sesame seeds & green onion finely sliced, for garnish

Instructions

  • Marinate chicken with soy sauce, cooking wine, and cornflour for 10 minutes.
  • Mix cornflour, flour, baking powder, salt with cold soda water to form batter.
  • Dust chicken in cornflour, then dip into batter. Fry in batches at 180°C/350°F for 5–6 minutes until golden and crispy. Drain on rack.
  • Make glaze by mixing honey, glucose/corn syrup, soy sauce, and cooking wine over medium heat until syrupy.
  • Toss fried chicken in warm glaze. Garnish with sesame seeds and green onions. Serve alone or over rice noodles.

Notes

Double frying gives extra crispiness. Glucose or corn syrup helps glaze stick without loss of crunch. Store in ventilated container and reheat in oven or air fryer for best texture.
