For the Cornbread Poppers

  • 1 cup yellow cornmeal fine or medium grind
  • 1 cup all-purpose flour
  • cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk or buttermilk
  • 2 large eggs room temperature
  • ½ cup unsalted butter melted and slightly cooled
  • ¼ cup honey
  • 1 teaspoon vanilla extract optional
  • ¼ cup unsalted butter melted for glaze
  • 2-3 tablespoons honey for glaze
  • pinch salt for glaze

  • Preheat oven to 375°F (190°C). Grease a mini muffin pan well or use nonstick spray.
  • In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk milk, eggs, melted butter, honey, and vanilla until smooth.
  • Pour wet ingredients into dry ingredients and stir just until combined. Do not overmix.
  • Spoon batter into the mini muffin pan, filling each cup about ¾ full.
  • Bake for 12–15 minutes, or until the tops are lightly golden and a toothpick comes out clean.
  • While the poppers bake, stir together melted butter, honey, and a pinch of salt for the glaze.
