  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • 1 cup BBQ sauce
  • ¼ cup honey
  • 1 cup long grain rice
  • 1 cup black beans drained and rinsed
  • 1 cup corn canned or frozen
  • 1 head romaine lettuce chopped
  • ½ cup shredded cheddar cheese
  • ¼ cup pickled onions
  • ¼ cup chopped cilantro
  • ¼ cup ranch dressing for drizzle

  • Cut the chicken breast into bite-sized chunks.
  • In a bowl, mix chicken with olive oil, salt, pepper, paprika, and garlic powder until coated.
  • Heat your pressure cooker on sauté mode; brown chicken 5-7 minutes until color develops.
  • Mix BBQ sauce and honey in a bowl, then pour over browned chicken and stir to coat.
  • Seal pressure cooker lid, set to high pressure for 10 minutes with float valve down.
  • After cooking, do either quick or slow release depending on your time preference.
  • Meanwhile, cook rice and heat black beans and corn.
  • Start assembling: add rice to bowl, then add chicken, beans, corn.
  • Top with chopped lettuce, shredded cheddar, pickled onions, and chopped cilantro.
  • Drizzle each bowl with ranch dressing and serve warm!
