  • 2 tablespoons olive oil
  • ½ teaspoon salt

  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • 1 cup BBQ sauce
  • ¼ cup honey
  • 1 cup long grain rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn canned or frozen works fine
  • 1 head romaine lettuce, chopped
  • ½ cup shredded cheddar cheese
  • ¼ cup pickled onions
  • ¼ cup chopped cilantro
  • ¼ cup ranch dressing

  • Start by preheating your oven to 375°F (190°C). This step will make sure your chicken bakes evenly and locks in those juices.
  • In a big bowl, toss your chicken breast with olive oil, salt, pepper, paprika, and garlic powder. Make sure every bit is coated so the flavors stick good.
  • Place the seasoned chicken on a baking sheet and pop it in the oven. Bake for about 25-30 minutes or until the center ain’t pink anymore.
  • While the chicken’s cooking, get your rice going according to the package directions. This helps you time everything so it all finishes together.
  • Next, mix the BBQ sauce and honey in a small saucepan over medium heat. Stir this until it’s warmed through and nice and combined.
  • When the chicken’s done, take it out and shred it using two forks. It should pull apart easy with all that juiciness inside.
  • In a large bowl, mix the cooked rice, black beans, and shredded chicken together. Drizzle the honey BBQ sauce on top and toss so it’s all coated with that sweet tangy goodness.
  • Serve the mixture in bowls topped with chopped romaine, cheddar, pickled onions, cilantro, and a drizzle of ranch if you want. Everything comes together for a tasty bite every time.

Notes

You can totally use pre-cooked chicken. Keep lettuce fresh separately when storing to avoid sogginess.
