These homemade pizza pockets come together quickly in the oven or pressure cooker, featuring melty mozzarella, savory pizza sauce, and a golden crust from an egg yolk glaze. Perfect for cozy dinners and simple snacking.
Start by preheating your oven to 400°F and line a baking sheet with parchment paper so you don’t have to deal with sticky mess later.
Divide the fresh pizza dough into 4 equal portions and roll each one out into a 6-inch circle. It doesn’t have to be perfect but try for even thickness.
On each dough circle, spread 2 tablespoons of pizza sauce on half of it. Leave a little border on edges so sauce can’t sneak out.
Sprinkle ½ cup shredded mozzarella cheese over the sauce evenly. It’s gonna melt just right inside.
Add a pinch of salt and pepper over the cheese to boost the flavor just a bit.
Fold the dough over the filling to make a half-moon shape, then press edges to seal it tight. A fork crimp is the way to go.
Brush the tops of each pocket with the whipped egg yolk for that golden brown touch. It’s all about that glow.
Pop the pockets in the oven and bake for 25 to 30 minutes till golden and cooked fully.
Let ’em cool for 5 minutes after before digging in.
Notes
Make ahead and freeze uncooked pizza pockets for easy snacks or dinners. Use natural pressure release to warm without sogginess if reheating in a pressure cooker.
