  • 1 15oz can black beans drained and rinsed
  • 1 cup frozen corn
  • ½ cup red onion finely diced
  • 1 clove garlic minced
  • ½ cup fresh cilantro chopped
  • 2 cups shredded cheddar cheese
  • 1 batch taco seasoning
  • 10 flour tortillas 7-inch size

  • Drain and rinse the black beans to remove excess liquid.
  • In a bowl, combine black beans, corn, red onion, garlic, cilantro, shredded cheddar, and taco seasoning. Mix well.
  • Place about ½ cup of filling on one side of each tortilla and fold over.
  • Cook quesadillas in a skillet over medium heat for 3-4 minutes until golden brown on one side.
  • Flip and cook the other side until crispy and cheese is melted.
  • Remove from heat, let rest for a minute, slice into wedges, and serve with toppings.

Notes

To freeze, layer uncooked quesadillas between parchment, seal in a freezer bag, and store up to 3 months. Reheat in skillet on low heat or microwave for softer texture.
