Drain and rinse the black beans to remove excess liquid.
In a bowl, combine black beans, corn, red onion, garlic, cilantro, shredded cheddar, and taco seasoning. Mix well.
Place about ½ cup of filling on one side of each tortilla and fold over.
Cook quesadillas in a skillet over medium heat for 3-4 minutes until golden brown on one side.
Flip and cook the other side until crispy and cheese is melted.
Remove from heat, let rest for a minute, slice into wedges, and serve with toppings.
Notes
To freeze, layer uncooked quesadillas between parchment, seal in a freezer bag, and store up to 3 months. Reheat in skillet on low heat or microwave for softer texture.
