  • 1 9 cup low-sodium chicken broth
  • 1 3 pounds boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 2 teaspoon paprika
  • 1 cup tzatziki sauce store-bought or homemade
  • 1 medium cucumber sliced thinly for garnish (optional)
  • 2 cup crumbled feta cheese
  • 2 cup chopped fresh parsley or dill for garnish

  • Add rice and chicken broth into the pressure cooker pot. Stir gently to even out the rice on the bottom.
  • Place chicken pieces over the rice.
  • Sprinkle garlic powder, onion powder, oregano, and paprika evenly over chicken.
  • Seal lid tightly, ensure the sealing ring is in place.
  • Cook on high pressure for 10 minutes once pressure has built.
  • Allow a 10-minute natural release, then quick release remaining pressure.
  • Open lid, check doneness. Drizzle tzatziki sauce over chicken and rice.
  • Garnish with sliced cucumber, feta cheese, and fresh parsley or dill. Serve warm.

Notes

Store leftovers in airtight containers in the fridge for up to 4 days. For meal prep, cook components separately and add fresh sauce upon reheating. Can be frozen for future meals.
