Ingredients
  

  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 each bell pepper, chopped (any color)
  • 1 each zucchini, sliced
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • to taste salt and pepper
  • Fresh parsley, chopped, for garnish (optional)

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Add the chopped onion and garlic to the skillet. Sauté for about 2-3 minutes, until the onion is translucent.
  • Increase the heat to medium-high and add the chicken pieces to the skillet. Season with salt, pepper, oregano, and paprika. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink in the center.
  • Add the bell pepper, zucchini, and broccoli to the skillet. Cook for another 5-7 minutes, stirring frequently, until the vegetables are tender but still crisp.
  • Stir in the cherry tomatoes and cook for an additional 2 minutes, until they are warmed through.
  • Taste and adjust the seasoning with more salt and pepper if needed.
  • Serve hot, garnished with fresh parsley if desired.

Notes

You can customize the vegetables based on your preference or what's in season.
This dish pairs well with brown rice or quinoa if you want to add a grain.
Make it vegetarian by substituting chicken with firm tofu or chickpeas.
