Heat olive oil and half the butter in the pressure cooker pot using the sauté function until butter melts but doesn’t burn.
Add fresh minced garlic, stir for 1-2 minutes until fragrant but not browned.
Sprinkle in flour, paprika, cayenne, salt, and pepper; stir to combine and thicken the sauce for about another minute.
Add shrimp, toss to coat with sauce, and cook on sauté for 3-4 minutes until pink and opaque.
Turn off sauté, pour in lemon juice, and add remaining butter, stirring until melted and sauce is shiny.
Seal the pressure cooker lid, set to high pressure for 1 minute. Quick release the pressure to prevent overcooking.
Notes
Serve with white rice to soak up the buttery garlic sauce, and garnish with fresh parsley for a vibrant finish.
