1 cooking spray or oil
- 6 large eggs
- 1 cup diced cooked ham
- ½ cup shredded cheddar cheese
- ¼ cup milk
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup diced bell pepper Optional
- ¼ cup diced onion Optional
Preheat your oven to 350°F (175°C). Spray a muffin tin with cooking spray or lightly oil it to prevent sticking.
In a mixing bowl, crack the 6 large eggs and add the milk, salt, and pepper. Whisk together until well combined.
Stir in the diced ham, shredded cheddar cheese, and optional vegetables (bell pepper and onion) if using. Mix until evenly distributed.
Pour the egg mixture evenly into each muffin cup, filling them about three-quarters full.
Bake in the preheated oven for approximately 15 minutes, or until the egg cups are set and lightly golden on top.
Remove from the oven and allow to cool slightly before using a fork to gently loosen the edges and remove the muffin cups from the tin.
Serve warm, or let them cool completely and store in an airtight container in the refrigerator for up to five days.
You can customize these muffin cups by adding other ingredients such as spinach, tomatoes, or different types of cheese.
To reheat, simply microwave the muffin cups for 30-60 seconds.
These cups are great for on-the-go breakfasts; you can easily grab a couple as you head out the door!
