Get your grill or grill pan hot over medium-high heat. It’s good to have it ready to go when your chicken’s marinated, trust me.
Whisk together the olive oil, lemon juice, Greek yogurt, red wine vinegar, red onion, garlic, oregano, thyme, and coriander in a bowl. This marinade is where your flavor party starts.
Add your chicken breasts to the marinade. Make sure they’re well coated and let them chill out for at least 30 minutes. This lets all those good tastes soak in.
Remove the chicken and grill it about 6-7 minutes per side. Watch for that internal temp hitting 165°F—that means done and safe to eat.
Let the chicken rest for 5 minutes. When you slice it into strips, you’ll see that tender pull you were waiting for.
Serve up the chicken in your homemade pita flatbread. Add toppings like tomato, cucumber, lettuce, onions, and tzatziki sauce made from the cucumber, yogurt, garlic, lemon, olive oil, vinegar, herbs, and pepper you prepped earlier.
Notes
Use store-bought pita to save time. Marinate chicken overnight to enhance flavor. Tzatziki can be prepared in advance.
