  • 1 pound Chicken thighs diced
  • 1 cup Onion diced
  • 1 cup Green bell pepper diced
  • 1 cup Celery diced
  • 4 cloves Garlic minced
  • 6 cups Chicken broth
  • 2 cups Okra sliced
  • 2 tablespoons Cajun seasoning
  • 1 Bay leaf
  • Salt to taste
  • Pepper to taste
  • Cooked rice for serving

  • Brown the andouille sausage in a large pot over medium heat until crispy edges form.
  • Add diced chicken thighs and cook until browned and juices are locked in.
  • Stir in diced onion, bell pepper, celery, and minced garlic; let them soften.
  • Pour in chicken broth and add okra, Cajun seasoning, bay leaf, salt, and pepper; stir well.
  • Seal pressure cooker and cook at high pressure for 15 minutes, then allow natural release.
  • Remove bay leaf, serve gumbo over cooked rice, and garnish with green onions.
