  • 1 lb ground turkey
  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 1 medium zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Add the diced onion and sauté for about 3-4 minutes until it becomes translucent.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Add the ground turkey to the skillet, breaking it up with a spoon as it cooks. Cook until browned and no longer pink, about 5-7 minutes.
  • Incorporate the bell pepper, zucchini, and cherry tomatoes into the skillet. Stir well to combine.
  • Season the mixture with oregano, paprika, salt, and pepper. Cook for an additional 5-7 minutes until the vegetables are tender.
  • Stir in the fresh spinach and cook until just wilted, about 2 minutes.
  • Serve hot, garnished with grated Parmesan cheese if desired.

Notes

You can customize this recipe by adding other vegetables, such as carrots or broccoli, based on your preference.
For an extra kick, add red pepper flakes or hot sauce while cooking.
