  • 1 pound potatoes peeled and diced
  • 1 pound 93% lean ground beef
  • 1 small yellow onion diced
  • 1 red bell pepper diced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt plus more to taste
  • 0.25 teaspoon ground black pepper
  • 1 to 2 teaspoons hot sauce plus more to serve
  • 2 green onions sliced
  • optional toppings Greek yogurt, sour cream, cheddar cheese, brown rice or cauliflower rice

  • Heat canola oil in a large skillet over medium heat until shimmering.
  • Add diced potatoes and cook, stirring occasionally, until golden and tender, about 10-12 minutes. Set aside.
  • In the same pan, add the ground beef. Cook and break up with spoon until browned, about 5-7 minutes.
  • Add diced onion and red bell pepper. Sauté until softened, about 5 minutes.
  • Stir in Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, and dried oregano until well coated.
  • Return the potatoes to the skillet and stir everything together. Cook for another 5 minutes to meld flavors.
  • Stir in green onions. Adjust salt and pepper to taste.
  • Serve hot topped with optional toppings like yogurt, cheese, or more hot sauce.

Notes

Refrigerate leftovers in an airtight container for up to 3 days. Rewarm in a skillet or microwave with a splash of water. Serve topped with egg, wrapped in a tortilla, or on rice.
