Instructions
Preheat oven to 400°F and line a baking tray with parchment paper.
In a large bowl, combine ground chicken, breadcrumbs, parsley, onion, garlic, oregano, cumin, salt and pepper. Mix gently.
Scoop about 1.5 tablespoons, form into meatballs, and arrange on tray.
Bake for 20–25 minutes until cooked through and golden.
Mix tzatziki sauce: yogurt, cucumber, garlic, dill, lemon juice, olive oil, salt and pepper. Chill.
To assemble: layer cooked rice, meatballs, chopped veggies, tzatziki and drizzle with olive oil, lemon juice, and vinegar. Serve immediately.
Notes
Store meatballs separately. Tzatziki should stay chilled to maintain texture. Meal prep components can be divided between containers for freshness.
