  • 1 large egg optional but helps a bit with texture, you can skip it
  • 4 ¼ cups all-purpose flour spooned and leveled, this is the bread’s backbone
  • 3 tablespoons granulated sugar for a little mild sweetness
  • 1 teaspoon baking soda this is what makes it rise fast and airy
  • 1 teaspoon salt because every good bread needs it

Instructions

Instructions

  • Preheat your oven to 425 degrees Fahrenheit.
  • In a large mixing bowl, whisk the flour, sugar, baking soda, and salt together.
  • Cut the cold butter into the flour mixture until it resembles coarse crumbs.
  • Make a well in the center, pour in buttermilk and egg if using. Stir until the dough comes together, add raisins if desired.
  • Turn the dough onto a floured surface and knead gently for about 30 seconds until smooth. Shape into a round loaf.
  • Cut a cross on top. Place on parchment and cook in preheated oven for 25 to 30 minutes or until golden brown and sounds hollow when tapped.
  • Alternatively, steam in your pressure cooker following the model's slow release settings.
  • Use pre-measured ingredients to save time and skip the math.
  • Pre-cube cold butter for faster mixing, use parchment to line cooker or pan for easy cleanup.
  • Reheat leftover bread by wrapping in foil and warming in the oven at low temperature.

Notes

Let the bread cool completely before slicing or storing to keep its texture perfect.
