Ingredients
  

  • 1 pound ground beef
  • 1 cup gluten-free pasta such as rice or corn pasta
  • 14.5 ounces diced tomatoes canned, drained
  • 1 cup gluten-free beef broth
  • 1 cup frozen mixed vegetables carrots, peas, corn
  • 1 cup shredded cheddar cheese
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • to taste salt
  • to taste pepper
  • fresh parsley for garnish (optional)

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onions are translucent, about 3-4 minutes.
  • Add the ground beef to the skillet. Cook until browned and no longer pink, stirring occasionally. Drain any excess fat.
  • Stir in the drained diced tomatoes, gluten-free beef broth, frozen mixed vegetables, gluten-free pasta, Italian seasoning, salt, and pepper. Mix everything well.
  • Bring the mixture to a simmer and cook for about 5 minutes, allowing the pasta to start cooking and absorb some of the liquid.
  • Transfer the mixture into a greased 9x13 inch casserole dish. Spread it evenly.
  • Sprinkle the shredded cheddar cheese on top of the casserole.
  • Bake in the preheated oven for 25 minutes, or until the cheese is bubbly and golden brown.
  • Remove from the oven and let it cool for a few minutes before serving.
  • Garnish with fresh parsley if desired, and serve warm.

Notes

You can substitute the ground beef with ground turkey or chicken for a leaner option.
Feel free to add your favorite vegetables to customize the dish.
