Ingredients
  

  • 12 ounces gluten-free pasta your choice, like penne or spaghetti
  • 6 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon red pepper flakes adjust to taste
  • 1 cup grated Parmesan cheese
  • ½ cup fresh parsley chopped
  • Salt to taste
  • Black pepper to taste

Instructions
 

  • Bring a large pot of salted water to a boil. Add the gluten-free pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta cooking water, then drain the pasta in a colander.
  • In the same pot, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, cooking for about 1-2 minutes until fragrant, being careful not to let the garlic burn.
  • Return the drained pasta to the pot with the garlic oil. Toss to combine, and add the reserved pasta water gradually, mixing until the desired sauce consistency is achieved.
  • Stir in the grated Parmesan cheese, chopped parsley, and season with salt and black pepper to taste. Mix until everything is well combined and the cheese is melted.
  • Serve hot, garnished with extra Parmesan and parsley if desired.

Notes

Feel free to add vegetables like spinach or cherry tomatoes for added nutrition and flavor.
For a richer taste, try substituting some of the olive oil with butter.
Adjust the amount of garlic and red pepper flakes according to your preference for spiciness.
