Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the gluten-free all-purpose flour, instant yeast, salt, and sugar until well combined.
In another bowl, combine the warm water, eggs, olive oil, and apple cider vinegar. Mix well.
Pour the wet ingredients into the dry ingredients and stir with a rubber spatula until a dough forms. The dough will be slightly sticky.
Allow the dough to rest for 10 minutes to hydrate the flour.
Using wet hands, divide the dough into 12 equal pieces and shape them into rolls. Place them on the prepared baking sheet, leaving some space between each roll.
Cover the rolls with a clean kitchen towel and let them rise in a warm place for another 20 minutes.
Once risen, place the baking sheet in the preheated oven and bake for 25 minutes, or until the rolls are golden brown.
Remove the rolls from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack.
