Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the olive oil, minced garlic, dried Italian seasoning, salt, pepper, and half of the Parmesan cheese (¼ cup). Mix well to create a marinade.
Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Set aside for a few minutes to let the flavors infuse.
On a baking sheet, arrange the halved baby potatoes. Drizzle them with a little olive oil and sprinkle with salt and pepper. Toss to coat evenly.
Place the marinated chicken thighs on the same baking sheet, skin-side up, among the potatoes.
Sprinkle the remaining ¼ cup of grated Parmesan cheese over the chicken and potatoes.
Roast in the preheated oven for 35-40 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the potatoes are fork-tender.
Optional: For extra crispy skin, broil for an additional 2-3 minutes at the end of cooking time.
Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley if desired before serving.
