Garlic Parmesan Chicken and Potatoes

Quick skillet meals are a staple for my busy family during the week. Meals like this one help keep us out of the drive-thru and save us a little bit of money. This is an easy dinner option that is also delicious!

  • 1 lb chicken breasts cubed for easy bite sizes
  • 4 to 5 small or medium russet potatoes for that fluffy good texture
  • Olive oil to help flavors stick and crisp up
  • Salt and pepper the basics that make everything better
  • Garlic powder and minced fresh garlic cause garlic’s the star here
  • Paprika for a little smoky kick and color on those potatoes
  • Onion powder to add some depth to the seasoning mix
  • Italian seasoning for that herby yum in your chicken
  • 2 tablespoon butter to dot the chicken and melt into that sauce
  • Buffalo Wild Wings Garlic Parmesan Sauce plus 1 cup shredded mozzarella cheese for topping

  • Preheat your oven to 400°F. This gets your potatoes crispy and chicken baked right.
  • Toss the cubed chicken in a big bowl with half the olive oil, salt, pepper, paprika, onion powder, Italian seasoning, and minced garlic. Coat it good so every bite’s tasty.
  • In another bowl, toss your russet potatoes with the rest of the olive oil, salt, pepper, garlic powder, and paprika. Spread them out evenly so they roast perfect.
  • Lay the chicken and potatoes side by side on a baking sheet. Make sure they got some space to crisp up.
  • Dot the chicken pieces with little pats of butter. This melts and makes everything rich and garlicky.
  • Bake for about 25 to 30 minutes. Your chicken should be cooked through and potatoes tender when you poke ’em.
  • Pull the tray out and drizzle that Buffalo Wild Wings Garlic Parmesan Sauce all over the chicken and potatoes—dang that sauce smells good!
  • Sprinkle shredded mozzarella on top then pop it back in the oven for 5 to 7 minutes. You want the cheese all melted and bubbly before you dive in.

Notes

If you don't have an air fryer, you can cook the potatoes in the oven at 400 degrees F for about 30 minutes. It also helps to stir the potatoes around a few times while they cook.
