In a small bowl, mix the softened butter, minced garlic, salt, and black pepper until well combined.
Spread the garlic butter mixture on one side of each slice of bread.
Heat a frying pan or skillet over medium heat.
Place two slices of bread in the pan, buttered side down, and add half of the shredded cheese on top of each slice.
Place the remaining two slices of bread, buttered side up, on top of the cheese.
Grill the sandwiches for about 3-4 minutes, or until the bottom is golden brown.
Carefully flip the sandwiches using a spatula and grill the other side for another 3-4 minutes until golden brown and the cheese has melted.
Remove the sandwiches from the pan, let them cool for a minute, then cut in half.
Garnish with fresh parsley, if desired, and serve warm.
