Ingredients
  

  • 4 large yellow onions Thinly sliced (about 1.5 kg)
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 cups beef broth Or vegetable broth for a vegetarian option
  • 1 cup dry white wine Optional
  • 1 each bay leaf
  • 4 sprigs fresh thyme Or 1 teaspoon dried thyme
  • 8 slices French baguette Toasted
  • 1.5 cups grated Gruyere cheese Or Swiss cheese

Instructions
 

  • In a large heavy-bottomed pot or Dutch oven, melt the butter and olive oil over medium heat.
  • Add the sliced onions, sugar, salt, and pepper. Stir well to coat the onions.
  • Cook the onions, stirring frequently, for about 30 minutes, until they are golden brown and caramelized. If they start to stick to the bottom, lower the heat slightly and add a splash of water to release them.
  • Once the onions are caramelized, add the white wine (if using) and scrape up any brown bits from the bottom of the pot. Allow to simmer for 5 minutes.
  • Add the beef broth, bay leaf, and thyme. Bring to a boil, then reduce the heat and let it simmer for 10 minutes. Remove the bay leaf and thyme sprigs.
  • Preheat the broiler in your oven.
  • Divide the soup into individual broiler-safe bowls. Place a slice of toasted baguette on top of each bowl, then generously sprinkle with the grated cheese.
  • Place the bowls under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Keep a close eye to prevent burning.
  • Carefully remove the bowls from the oven and let them cool slightly before serving.

Notes

For a richer flavor, consider adding a splash of balsamic vinegar during the cooking of the onions. You can also substitute the Gruyere cheese with mozzarella or cheddar if you prefer. Serve with a side salad for a complete meal. Enjoy your delicious French onion soup!
