Ingredients
  

  • 1 pound beef chuck, cut into small cubes
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups egg noodles
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon dried thyme
  • 1 tablespoon Worcestershire sauce

  • 1 cup shredded Gruyère cheese for serving, optional
  • fresh parsley, chopped for garnish, optional

Instructions
 

  • In a large pot or Dutch oven, heat olive oil and butter over medium heat. Add the sliced onions and cook until caramelized, about 15 minutes, stirring occasionally.
  • Add the minced garlic to the onions and cook for another 1-2 minutes until fragrant.
  • Increase the heat to medium-high and add the cubes of beef. Season with salt and pepper. Brown the beef on all sides, approximately 5-7 minutes.
  • Stir in the dried thyme and Worcestershire sauce, then pour in the beef broth. Bring the mixture to a simmer and cover the pot. Reduce the heat to low and let it cook for 25-30 minutes until the beef is tender.
  • While the beef is cooking, bring a separate pot of salted water to boil and cook the egg noodles according to package instructions. Drain and set aside.
  • Once the beef is tender, stir in the cooked egg noodles and mix everything well. Adjust the seasoning with additional salt and pepper to taste.
  • Serve hot, topped with shredded Gruyère cheese and a sprinkle of fresh parsley if desired.

Notes

For a deeper flavor, you can sauté the onions longer until they are deeply caramelized, which may take about 30 minutes.
If you want to make it a one-pot meal, you can cook the noodles directly in the beef mixture, adding them along with an extra cup of broth, and simmer until the noodles are cooked.
This dish pairs well with crusty bread for dipping.
