Ingredients
  

  • 2 pieces English muffins, split in half
  • 4 large eggs Ensure yolk remains intact.
  • 1 cup shredded mozzarella cheese
  • 1 cup diced vegetables Bell peppers, onions, and mushrooms.
  • 4 slices cooked bacon or sausage patties Or a vegetarian alternative.
  • 1 teaspoon olive oil For cooking vegetables.

  • for garnish fresh basil or parsley Optional.

Instructions
 

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper if desired.
  • In a skillet, heat olive oil over medium heat. Add the diced vegetables and cook for about 3-4 minutes until soft. Season with salt and pepper. Remove from heat.
  • Place the split English muffins on the prepared baking sheet, cut side up.
  • On each muffin half, distribute the cooked vegetables evenly.
  • Tear the bacon or sausage into pieces and place on top of the vegetables.
  • Crack one egg onto each muffin half, ensuring the yolk remains intact. Sprinkle with salt and pepper.
  • Top each pizza with mozzarella cheese.
  • Bake in the preheated oven for 12-15 minutes, or until the eggs are cooked to your liking and the cheese is melted and bubbly.
  • Remove from the oven and let cool for a minute. Garnish with fresh herbs if desired. Serve warm.

Notes

Feel free to customize your toppings with your favorite breakfast ingredients, such as spinach, tomatoes, or different cheeses.
For a spicy kick, add some red pepper flakes or drizzle with hot sauce before serving.
