Ingredients
  

  • 2 each English muffins, split in half (4 halves total)
  • 4 large eggs
  • ½ cup milk
  • ½ cup shredded cheese (such as cheddar or mozzarella)
  • ½ cup diced vegetables (bell peppers, onions, or spinach)
  • ¼ cup cooked bacon or sausage (optional)
  • to taste salt
  • to taste pepper
  • as needed olive oil or butter for cooking

Instructions
 

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper if desired.
  • In a mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper to taste.
  • Heat a frying pan over medium heat and add a small amount of olive oil or butter.
  • Pour the egg mixture into the frying pan and scramble the eggs until fully cooked, about 5 minutes. Remove from heat.
  • Place the English muffin halves on the prepared baking sheet, cut side up.
  • Evenly distribute the scrambled eggs over each muffin half.
  • Top each muffin with shredded cheese, diced vegetables, and cooked bacon or sausage if using.
  • Bake in the preheated oven for 10 minutes or until the cheese is melted and bubbly.
  • Remove from the oven and let cool slightly before serving.

Notes

Feel free to customize your pizzas with any toppings of your choice, such as tomatoes, olives, or various types of cheese. These breakfast pizzas can also be made ahead of time and reheated for quick breakfasts during the week.
