Preheat the oven to 325°F (160°C).
Mix graham cracker crumbs and melted butter. Press into springform pan.
Beat cream cheese and sugar until smooth. Use hand mixer.
Add eggs one at a time, mixing well after each.
Stir in sour cream, brewed Irish coffee, heavy cream, and vanilla extract.
Pour mixture into crust, smooth top. Bake 30-35 minutes until set but slightly wobbly.
Turn oven off, cool with door slightly open for 1 hour.
Refrigerate 4 hours before slicing. Dust cocoa powder before serving.
