Ingredients
  

  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • 3 (8 oz) packages cream cheese softened
  • 1 cup sugar
  • 3 large eggs
  • 1 cup sour cream
  • ½ cup brewed Irish coffee
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract

  • Preheat the oven to 325°F (160°C).
  • Mix graham cracker crumbs and melted butter. Press into springform pan.
  • Beat cream cheese and sugar until smooth. Use hand mixer.
  • Add eggs one at a time, mixing well after each.
  • Stir in sour cream, brewed Irish coffee, heavy cream, and vanilla extract.
  • Pour mixture into crust, smooth top. Bake 30-35 minutes until set but slightly wobbly.
  • Turn oven off, cool with door slightly open for 1 hour.
  • Refrigerate 4 hours before slicing. Dust cocoa powder before serving.
