- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons red curry paste
- 4 cups vegetable broth
- 1 can (13.5 oz) coconut milk
- 1 cup carrots, sliced
- 1 cup bell pepper, sliced
- 2 cups fresh spinach
- 1 package (12 oz) pre-made dumplings such as chicken or vegetable
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- to taste salt and pepper
- for garnish fresh cilantro optional
Heat the vegetable oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.
Add the red curry paste to the pot and mix well, cooking for 1-2 minutes to release the flavors.
Pour in the vegetable broth and coconut milk, stirring to combine. Bring the mixture to a gentle boil.
Once boiling, add the sliced carrots and bell pepper. Reduce heat and let simmer for 8-10 minutes until the vegetables are tender.
Carefully add the dumplings to the pot and cook according to package instructions, usually about 5-6 minutes.
Stir in the fresh spinach, soy sauce, lime juice, and season with salt and pepper to taste. Cook for an additional 2 minutes until the spinach is wilted.
Serve the soup hot, garnished with fresh cilantro if desired.
You can use homemade dumplings if you prefer. Just ensure they are cooked properly according to your recipe.
Adjust the level of spiciness by adding more or less red curry paste according to your taste preference.
For a heartier soup, feel free to toss in additional vegetables like mushrooms or zucchini.
