Meatball Ingredients

  • 1 pound ground chicken
  • 2 green onions finely minced
  • 1 egg large
  • ½ lime zested
  • ½ cup panko breadcrumbs
  • 1 tablespoon cilantro minced fresh
  • 1 tablespoon ginger grated
  • 1 tablespoon lemongrass grated
  • 1 tablespoon garlic grated
  • 1 teaspoon kosher salt
  • ¼ cup sweet chili sauce for dipping or drizzling

Baking Instructions

  • Preheat your oven to 400F and line a baking sheet with parchment paper or grease it lightly.
  • In a large mixing bowl, combine all ingredients: ground chicken, green onions, egg, lime zest, panko, cilantro, ginger, lemongrass, garlic, and salt. Mix just until combined.
  • Scoop the meat mixture into 1.5-inch meatballs and place evenly on the baking sheet.
  • Bake for 20–25 minutes, until lightly golden and firm to the touch.
  • Remove from oven and let rest a few minutes to retain juices.
  • Serve warm with sweet chili sauce or over rice as a main dish.

Notes

You can make the mixture ahead and refrigerate overnight. Freeze extra meatballs for quick meals later.
