Preheat your oven to 400F and line a baking sheet with parchment paper or grease it lightly.
In a large mixing bowl, combine all ingredients: ground chicken, green onions, egg, lime zest, panko, cilantro, ginger, lemongrass, garlic, and salt. Mix just until combined.
Scoop the meat mixture into 1.5-inch meatballs and place evenly on the baking sheet.
Bake for 20–25 minutes, until lightly golden and firm to the touch.
Remove from oven and let rest a few minutes to retain juices.
Serve warm with sweet chili sauce or over rice as a main dish.
Notes
You can make the mixture ahead and refrigerate overnight. Freeze extra meatballs for quick meals later.
