First, preheat your oven to 350°F if you plan to finish in it, but since you're using pressure cooker, get that ready with a little water inside for steam.
Mix the pancake batter according to the box directions. You wanna keep it just like you do for normal pancakes but kinda pourable.
Grease your baking dish or the pot insert lightly with some butter so the casserole won't stick.
Lay down all your cut sausage pieces evenly at the base of the dish. This caramelizes a bit under pressure and flavors the batter.
Pour the prepared pancake batter slowly over the sausage so it covers them well and spreads evenly.
Seal your pressure cooker lid and make sure the float valve is in place. Set it to cook at high pressure for about 15 minutes.
When the time's up, do a natural release for 10 minutes so the casserole can settle nicely. Use slow release method if you wanna be extra careful.
Open the lid, butter on top, then maybe let it rest a bit before slicing. Drizzle syrup when serving.
Notes
Serve with syrup for added sweetness. Customize with different sausages or spice additions to your liking. Can be doubled but adjust for cooking times.
