These easy Reuben Egg Rolls are the perfect crowd-pleasing appetizer for St. Patrick’s Day, game day or any gathering. All the flavors of the classic Reuben sandwich are rolled up into a crispy egg roll. Yum.

  • 1 Pressure cooker with sealing ring
  • 1 Air Fryer optional

Ingredients
  

Main ingredients

  • 8-10 egg roll wrappers shells holding it all together
  • 8 oz corned beef or pastrami sliced bite size
  • 1 cup sauerkraut adds tangy crunch
  • 1 cup shredded Swiss cheese melty goodness
  • Thousand Island or Russian dressing for dunking
  • Non-stick spray to coat the egg rolls

Cooking Instructions

  • Mix corned beef, sauerkraut, and Swiss cheese in a bowl.
  • Place an egg roll wrapper flat. Add 2 tablespoons of filling in the center.
  • Fold sides over filling and roll, sealing edges with water.
  • Repeat for all egg rolls. Lightly spray with non-stick spray.
  • Place in air fryer. Air fry at 375°F for 10-12 minutes, flipping halfway.
  • Bake in oven or deep fry for alternative cooking methods.
  • Serve with Thousand Island or Russian dressing on the side.
