  • 12 oz spaghetti whole wheat or favorite brand
  • 2 tablespoon olive oil for mushrooms
  • 1 lb cremini mushrooms sliced
  • 4-6 cloves garlic chopped
  • to taste Kosher salt and ground pepper
  • ½ cup grated Pecorino Romano cheese plus more for garnish
  • 2-3 tablespoon fresh parsley leaves coarsely chopped

  • Bring a big pot of salted water to boil. Cook spaghetti al dente. Reserve ½ cup pasta water and drain.
  • Heat olive oil in a skillet over medium heat. Add mushrooms and brown for 8-10 minutes.
  • Add chopped garlic to the skillet and cook for 1-2 minutes until fragrant.
  • Season with kosher salt and pepper to taste.
  • Mix drained spaghetti into skillet. Add reserved water if dry and toss to coat.
  • Sprinkle in cheese and parsley. Toss again until well combined.
  • Transfer to pressure cooker to keep warm if needed. Use natural release to prevent overcooking.
  • Serve hot with extra Pecorino and parsley if desired.

Notes

Don’t forget to reserve the pasta water! It helps create a creamy sauce. Store leftovers in airtight containers for up to 4 days in the fridge. Reheat with a splash of water or broth. Fresh mushrooms are better than canned. For meal prep, store with extra cheese and parsley on the side.
