Instructions
Bring a big pot of salted water to a boil and cook the orzo per the package instructions until tender but not mushy. Drain and rinse with cold water.
In a large bowl, combine the cooled orzo, chopped red bell pepper, cucumber, diced red onion, crumbled feta cheese, minced garlic, parsley, and basil.
In a small bowl, whisk together lemon juice, lemon zest, and olive oil to make the dressing.
Pour the dressing over the salad mix and toss gently. Add salt and cracked pepper to taste.
Chill in the fridge for at least 30 minutes before serving.
Notes
For best results, chill before serving. Toss with an extra drizzle of olive oil before serving.
