  • 1 ½ - 2 cups orzo uncooked
  • 1 red bell pepper chopped
  • 1 English cucumber chopped
  • ½ red onion small diced
  • 6 oz. feta cheese crumbled
  • 2-3 cloves garlic minced
  • ¼ c fresh parsley chopped
  • ¼ c fresh basil chopped
  • 1.5-2 oz lemon zest and juice of 1
  • ½ cup extra virgin olive oil
  • 1 Tbsp honey
  • ½ tsp sea salt
  • ½ tsp cracked pepper

  • Bring a big pot of salted water to a boil and cook the orzo per the package instructions until tender but not mushy. Drain and rinse with cold water.
  • In a large bowl, combine the cooled orzo, chopped red bell pepper, cucumber, diced red onion, crumbled feta cheese, minced garlic, parsley, and basil.
  • In a small bowl, whisk together lemon juice, lemon zest, and olive oil to make the dressing.
  • Pour the dressing over the salad mix and toss gently. Add salt and cracked pepper to taste.
  • Chill in the fridge for at least 30 minutes before serving.

Notes

For best results, chill before serving. Toss with an extra drizzle of olive oil before serving.
