  • 10 large croissants torn into pieces for soaking up the custard
  • 6 ounces sliced ham deli or leftover
  • 2 cups shredded gruyere cheese for nutty, melty flavor
  • 4 tablespoons unsalted butter for greasing and sauteing
  • 1 yellow onion diced small
  • 1 tablespoon minced fresh thyme leaves adds fresh herby taste
  • 2 tablespoons minced fresh sage leaves gives an earthy punch
  • 2 ½ cups half and half creamy custard base
  • 6 eggs brings everything together
  • 1 tablespoon dijon mustard for tang and texture
  • 1 tablespoon whole grain mustard for tang and texture

  • Preheat your oven to 350 degrees Fahrenheit.
  • Grease a baking dish with some of that unsalted butter.
  • Tear those croissants into pieces and toss them into your baking dish.
  • Heat a skillet over medium and melt your butter. Sauté the diced onion until translucent and soft.
  • Sprinkle in the minced thyme and sage, sauté for another minute.
  • Spread the sautéed onions over the croissant layer. Add ham slices and sprinkle shredded gruyere cheese on top.
  • Whisk half and half, eggs, dijon, and whole grain mustard until smooth in a bowl.
  • Pour the egg mixture gently over everything, ensuring even soaking. Let it sit for 10 minutes.

Notes

To store, keep the bake airtight in the fridge for up to 4 days. For freezing, wrap portions in plastic wrap and foil. Thaw overnight before reheating.
